袁子杰準(zhǔn)備提拔一個人當(dāng)Sous chef,因為他準(zhǔn)備去美國了。“Who wants to be a sous chef?“(誰想當(dāng)副主廚?)袁子杰問了整個廚房。
所有人都安靜了下來。
“What?“(怎么了?)袁子杰問道。
“Are you leaving us?“(你放棄我們了?)一個廚師問道。
“No, look, I am going on a vacation in a week. Someone has to take charge when I am gone. He will practice while I am here.”(不是,我一周后要放個假。總有人要管理廚房的。他會在我還在的時候練習(xí)。)
“Do you guys want to nominate someone?“(你們要推薦一個人嗎?)袁子杰繼續(xù)到。
沉默。
“Well, then. I guess Ms Ye is gonna decide.”(好吧,那就,葉夢露決定吧。)
袁子杰想起來他要請假來著。于是說,“Ok, I will tell the boss now. See y'ou later.”(好了,我要去和老板說這件事,等會兒見。)
袁子杰敲響了葉夢露的門。“老板,五天后我要去美國,請假一周。”
“現(xiàn)在客人來了,你不回去?”
“沒事,批準(zhǔn)一下。然后幫我選一個副主廚。”
“好的,就Matt了。”
“Ok。”
袁子杰回到廚房。“Matt, you are the chosen one.”(Matt,你是天選之子/你被選中了)
Matt來到袁子杰旁邊。“Ok, your job is to make sure customers don't wait too long for the food and the food is good.”(你的職責(zé)就是保證顧客不用等太久,并且食物是好的。)
“Yea chef.”(好的,主廚。)
“Also remember, anyone can take his spot if he is not doing well?do you understand?”(還有,記住,任何人都可以取代他,明白嗎?)
“Yes, chef “(是的,主廚。)
“Ok, follow his commands.”(好的,跟著他的指令。)
一張一張單子打印出來。一開始還好,頭盤由于比較簡單。后來,事情就變亂了。來的有些晚的客人的頭盤和來的比較早的客人的主菜差不多時間出菜。廚房里手忙腳亂。
“Look, always have a brief idea of when should each table?receive their food next. Look, get those appetizers out, did you check if everything is good?”(好的,一直有一個大概沒一桌什么時候應(yīng)該再出菜的概念。先把前菜弄出去。你看過每一個都是好的?)
Matt再檢查了一下。“They are all fine chef.“(都沒問題主廚。)
“Ok, do it. Don't wait for me.“(那好,去做,不要等我。)
“Yes chef.“(是,主廚。)
“Table five is complaining.”(五號桌已經(jīng)在抱怨了。)
“When is the food for table five done?”(五號桌的食物什么時候好?)Matt問道。
“Specify which dishes.”(把具體的菜名說一下。)袁子杰說到。
“One garlic butter pasta and one duck.“Matt繼續(xù)到。
“2 minutes.“(兩分鐘。)
“We are plating.“(我們在裝盤。)
“Communicate the information to the waiter.“(把信息給服務(wù)員。)袁子杰繼續(xù)到。
“Ok, 3 minutes for table five.“(好的,三分鐘五號桌好)Matt和服務(wù)員交流了一下。
“Next time, ask the waiters which table are ready for the main course.”(下一次,問他們哪些桌可以上主食了。)袁子杰建議到。
“Ok, chef.“(好的,主廚。)
